The owner of two artisan gelato parlours, Marco is a Fabbri Gelato-Making Master Class teacher and consultant. He has been making artisan gelato for more than 20 years with two gelato parlours in the province of Livorno.
I started working with Fabbri as a gelato-making technician about 7 years ago. My ongoing research with other colleagues, together with my enquiring mind and my quest to source quality raw ingredients, are my drive to grow professionally.
