He was born on 18/06/1971 in Faido (Switzerland) and graduated from hotel school in 1986 at the Albergo Scuola Florens in San Giovanni in Fiore (CS). During the first 10 years of my career, I worked as a commis and head waiter in various hotels and restaurants in Italy and abroad.
In the meantime, I perfected my knowledge of pastry, gelato and chocolate-making by frequenting and working in pastry shops in Switzerland, Puglia, and Sicily. I then continued working as a head chef in restaurants and hotels until 2009. After that I went on to open 2 pastry shops/gelato parlours and worked in catering, as well as providing consultancy to several companies with which I still work today.
