Chocolate and Zenzero Fabbri Cupcakes

Ingredients

Makes 8 cupcakes 

  • 40 g flour 
  • 20 g unsweetened cocoa powder 
  • 60 g sugar 
  • 40 g soft butter 
  • 1 egg 
  • 1 teaspoon of vanilla extract 
  • ½ teaspoon baking powder 
  • approx. 12 Zenzero Fabbri nuggets  

For the chocolate frosting 

  • 150 g dark chocolate 
  • 100 g liquid cream

Preparation

  1. For the frosting: 
  2. Cut the chocolate coarsely. 
  3. Bring the cream to the boil in a small saucepan. When it boils, remove from the heat and add the chocolate, stirring quickly with a hand whisk until the mixture is smooth and lump-free. 

  4. Set aside at room temperature. 

  5. For cupcakes: 

  6. Place the soft butter, sugar and vanilla in a high-sided bowl. Use an electric beater to whisk the mixture for at least 7 to 8 minutes until frothy.  

  7. Add the egg and mix it with the whipped butter, then add the flour, baking powder and cocoa powder, mixing everything together using an electric whisk at low speed. Cut the Zenzero Fabbri nuggets into small pieces and add them to the mixture. 

  8. Fill the cupcake cases halfway and bake in the oven at 180°C for 20 minutes. Remove from the oven and leave to cool. 

  9. Once the frosting has cooled, place it in a piping bag with a star-shaped nozzle and decorate the cupcakes. Complete with pieces of Zenzero Fabbri and a few drops of its syrup and serve.
