Soak the gelatine in cold water. Combine the water and syrup in a small saucepan and bring to the boil. Remove from the heat.
Squeeze out the gelatine leaves and add them to the liquid while it is still hot. Then pour into silicone moulds or a small baking tin.
Cut the Zenzero Fabbri nuggets into small pieces and distribute them evenly across the moulds. Leave to cool at room temperature.
Lastly, refrigerate to make it easier to remove from the mould or to slice if we have chosen to use a small baking tin. Dip in caster sugar before serving.
